French Macarons Recipe
Ingredients:
*For 40 macarons*
6 egg whites
1 pinch of salt
400 grams of icing sugar
250 grams of ground almonds
1 to 2 drops of food coloring (yellow, red, brown and green)
For the filling:
350 grams of icing sugar
240 grams of softened butter
1 tablespoon vanilla extract
2 tablespoons whipping cream
1 tablespoon lemon zest
1 tablespoon crushed pistachios
1 tablespoon cocoa powder
1 tablespoon strawberry jam
Preparation:

1) Place egg whites in a metal bowl and add 1 pinch of salt. Beat with electric mixer until stiff peaks form (stiff peaks). Add 1 tablespoon of powdered sugar and continue beating. Hovering over the clear half of the remaining icing sugar; beat at high speed until glossy look good. Sift the remaining sugar and whisk again until blended.
2) Wrap the ground almonds with a spatula.
3) Divide the mixture into four different bowls. Stir in 1 or 2 drops of food coloring to each bowl to have masses of pink, yellow, green and brown. (It is recommended to start with a small amount and add more dye until the desired color).
4) Line a tray with baking paper. Fill a pastry bag with a small mixtures and form circles 2 inches in diameter. (Works with the sleeve in a position perpendicular to the tray for best results). Repeat with the remaining mixture, making sure to use a clean pastry bag for each.
5) Preheat oven to 170 ° C. Macaroni Let sit for 30 minutes while you prepare the filling.

6) Beat butter with an electric mixer until creamy. Add powdered sugar and continue beating until smooth mixture. Stir in cream and vanilla, and beat again until you have a light and fluffy consistency.
7) Divide the cream among four different bowls. Stir in cocoa, lemon zest, pistachio and strawberry jam on each of the bowls, to have four different flavors.
8) After you have rested Macaroni 30 minutes Bake in preheated oven for 14 minutes. Remove from oven and let cool in the same pan.
9) Once cool, spread the flat side of a macaroon with their corresponding filling macaroni and accommodates another of the same color on top, like a sandwich. Serve immediately or place in an airtight container and refrigerate.
